A well-cooked chicken will have a meat of 180 degrees F and 165 degrees F for the thigh and breast. Of course, those numbers are not absolute and you can still have a decent cooked chicken if the temperature is a little off.
If the chicken is undercooked, you can simply put it back in the deep fryer, it will not get damaged even if you already sliced it. Put it back for another 5 minutes or so.
After the chicken is cooked, remove it from the oil and let it cool off for about 10 to 15 minutes before cutting. The muscles of the chicken are still tight. If you cut it at that state, it will easily dry out. If you let it cool off, the meat will be tender and juices will start to appear. That is the sign of a perfectly deep fried chicken.
